Eating Out in New Brunswick

Last month I was on a tour in Nova Scotia and New Brunswick, two of three Canadian provinces that are known as the Maritimes in Eastern Canada. The third province in the Maritimes is Prince Edward Island.

Similar to my eating out in Newfoundland and Labrador in June, I ate out when I was in Nova Scotia and New Brunswick, primarily fish and seafood. Here’s a sampling of some of the delicious food that was on my plate while I was in New Brunswick.

Lobster Cooking Recipe

I got a Lobster Cooking recipe from Ron and Denise, owners of Shediac Bay Cruises. The traditional way of cooking lobsters is to boil them. Here’s the recipe:

Part 1 – Boiling

  • In a large pot, measure enough water to cover all the lobsters you are cooking.
  • Bring the water to boil.
  • Add about 1/2 cup (118 ml) of salt for each gallon of water used.
  • Place lobsters in boiling water. (Best to remove bands from claws. It can leave a rubber taste in meat. Use extra precaution handling lobsters.)
  • Wait for water to start boiling again before you time.

Part 2 – Boil times:

  • 1/2 lb or .227 kg lobsters – 12-15 min.
  • 1-2 lb or .454-.907 kg lobsters – 15-20 min.
  • 2-4 lb or .907-1.814 kg lobsters – 20-25 min.
  • 4-8 lb or 1.814-3.629 kg lobsters – 25-30 min.
  • 8 lb and over or 3.629 kg+ lobsters – 4 min./ pound

Note: Freshly molted lobsters (Soft shells) boil 2-3 min. less.

Part 3 – Fringing

  • Once the lobsters are done boiling, plunge them in cold water. Same salt content as the cooking. It will do two things: “Fringe” the meat from the shell and allow for a juicier lobster, making it easier to shell the meat out. (Add ice cubes in the water. You want to go from hot to cold as fast as possible, for a good “Fringe”.)
  • Leave them in the cold water for about 10 min.
  • Once out of the cold water, keep lobster on their back, belly-up, this will preserve the juices in the lobster much longer.
  • Cooked lobsters will preserve in the fridge for at least 3 days after.
  • The whole process goes a lot better when using a strainer to go from Boiling, Fringing and Serving!

Part 4 – Serving

Enjoy a “freshly” cooked lobster served cold. You can’t get a better lobster. Avoid the garlic butter and lemon juice, you are just camouflaging the taste.

Eating out while on vacation is definitely a treat as I rarely eat out when I’m at home. Monday October 10th is Canadian Thanksgiving holiday. I look forward to enjoying a family gathering and homemade meal. Happy weekend, everyone!

    I’ve tried lobster twice…just not my thing I guess. The last time I tried was at a lobster boil at a friend’s house in Maine. I figured if I’d like it, I’d like it that fresh. But no. I will however, help you eat that chocolate cake!

      Dawn, The lobster I had in New Brunswick was delicious. I understand lobster and seafood are not for everyone. Chocolate cakes on the other hand seem to be universally liked 🙂

      Susanne, That seafood salad was delicious. I rarely eat out when I’m at home. When I travel, trying local dishes is part of the overall experience.

    Lobsters always seem like a lot of hard and messy work to me Natalie – maybe the ones I’ve tried haven’t been cooked the right way so the meat comes out easily? Nice to see all the delicious food you ate along the way.

      Hi Leanne, The fringing (hot to cold) is key to make the lobster meat comes out easily. While lobster is messier to eat than other prepared food, I enjoyed it as it was a local dish in Atlantic Canada.

    Natalie, I love lobster but I’ll leave the cooking to someone else. One of the best things about traveling is trying local foods. I can imagine that all of the seafood in New Brunswick must be fresh and delicious.

      Suzanne, I agree with you one of the best things about traveling is trying local foods. The seafood in New Brunswick was unbelievably fresh. The blueberry pie was delicious, too (possibly the best blueberry pie that I’ve had). I don’t normally cook or eat lobster at home but Ron and Denise (the cruise owners and fishermen) showed me how easy it is to cook and eat lobster.

    It all looks rely good, though to my eye the lobster is upside down. lol. Just one of those funny things, they always server lobster “up right” around here, so it looks odd, even though I know it makes no difference how it is served. And I agree with the others who want a piece of that chocolate cake. Hope you have a good weekend and a great week ahead!

      Good eye, Trent. The lobster was cooked belly up to preserve the juices in the lobster much longer. The cook was working with a small counter space on the cruise boat to serve about 60 diners so with the lobster belly up, she could stack the plates before taking them to the tables.     Hi Natalie, About half your guests today like lobster. I love the way it looks on the plate. It’s beautiful. One of our Prescott restaurants makes a lobster and nacho appetizer that is out of this world. It’s tangy sweet, and it’s the only way I’ve ever been able to eat lobster. However, when in Newfoundland, do what the Newfoundlanders do, right? Good for you!

      Hi Marsha, My thinking is ‘when by the sea, eat seafood’. Fortunately I have no known allergy to shellfish or seafood so I can enjoy the local dishes. The lobster and nacho appetizer you mentioned sounds amazing.

    The food looks wonderful. I had a huge lobster that my ex-husband caught himself off the coast of NJ in the USA. It was at least 2 feet long. The meat was much sweeter than the smaller ones.

    All the food look amazing, but that blueberry pie!!! O my gosh, it looks delicious! I had so much raspberries this year, that were ripe at the same time as the blueberries in the forest, that I never picked any blueberries, except for a handful here and there that I ate while walking through the forest.     Your photos made my mouth water! Especially the sea food. I love a good lobster although I admit I will probably never cook one myself, I’m just not much into cooking. Whenever we go out to eat though, especially down the shore, it’s my first pick. Enjoy your Thanksgiving!

      Nancy, I’m not much into cooking either, except meals at home to sustain myself 🙂 However, since the cruise owners gave a demo and their recipe on how to cook and serve lobster, I figured why not learn something new.

    One of my favorite things about living in the Northwest (USA) was all the fresh seafood. Also a highlight of visiting Alaska. At least we can get good chocolate cake here in the desert 🙂

      Haha, Terri, I’m thankful I don’t weigh 200 lbs. 🙂 It’s calories in, calories out by exercising and moving daily. The chocolate desserts were good but that blueberry pie was perfection.
